Mimosa’s wine is handcrafted by award winning Swiss chef, Bernhard Hess and winemaker, Lourens van der Westhuizen. We believed that the Robertson terroir with the limestone soils are perfect for maturation of top quality Chardonnay.
Our Chardonnay comes from the Southern Part of the Robertson Wine Valley. This is the chardonnay region of South Africa.
The grapes where picked by hand in the early morning. Then it went into a cold storage room for 12 hours to chill down to 6 degrees. The grapes gets crushed and destemed into a small sub divider. The free run juice gets drained off immediately into small tanks for clarification. After a day of clarification the juice goes into French oak casks to start natural fermentation. Fermentation takes a month and some barrels sometimes takes a bit longer. The wine will be kept on the lees for the whole 12 month period of barrel maturation. The wine will be bottled on the farm with a mobile truck.
This is an elegant Chardonnay, with citrus, apples and pineapple notes on the nose, the palette are rich with complexity and lingers to the back. This wine is made to mature well.
This wine was barrel fermented and matured in French Oak barrels for 12 months. The nose shows beautiful citrus, apples and pineapple. On the palette you will be surprised with fruit, chalkiness and complexity that carries through a well balanced acidity.
